CHEF NORA'S SCRAMBLED EGGS

Decided to make myself a good ol' breakfast the other day and whipped up some scrambled eggs!

You will need:

Half a french onion, diced
1 tomato, diced
1 green bell pepper, diced
5 eggs
Salt and pepper
Olive oil
2 tablespoons of butter


Heat up the olive oil in deep saucepan. Once heated add in the chopped onions. Once they are slightly browned, add in the tomatoes and the green bell peppers. You can then add in your salt and pepper to taste. Once they are nicely browned, take them off the heat and set it aside.


Now with a clean sauce pan, place under low heat and add in the butter. Leave to melt and boil.


Once you see the bubbles in poppin up, its time to add the eggs.


The stirring part is a little tricky. I followed this video to get the perfect consistency.


Alright, so before you finish cooking your scrambled eggs, when it's still watery, add in your sauteed veggies.


Mix them up real good and you're done!

You can also add ham or eat it with a side of toast! I decided to go with tortillas.
